Preparation
1. Cut the bread into cubes. Quarter the cherry tomatoes, and dice the cucumber
and bell pepper.
2. Thinly slice the onion.
3. Add the fresh herbs, apple cider vinegar, and season with salt and pepper.
4. Add the beans and drizzle with extra virgin olive oil. Mix everything well.
5. Allow the mixture to sit for about 30 minutes, letting all the flavors meld together.

- 15 cherry tomatoes
- 1 small cucumber
- 1 small green bell pepper
- ½ onion
- 1 can of butter beans
- 5-6 fresh basil leaves
- 2 slices of rustic bread
- 2 tbsp (30 ml) of apple cider vinegar
- 1 tsp of oregano
- 2 tbsp (30 ml) of extra virgin olive oiil
- Salt and pepper to taste
