Preparation

Brown the onion in a pan with a little extra virgin olive oil, add carrots and the drained beans and let them develop more flavor. Blend half beans, add the beated egg and then the remaining beans lightly smashed. Salt and pepper to taste, and add the minced herbs. Adjust the mix consistency with the bread crumbs and mould it in the shape of a medallion. Cook in a hot pan greased with oil for a few minutes on each side.

Vegan version: do not use the egg but blend 2/3 of the beans instead of half. 

Ingredients

  • Approximately 220 gr (1 cup) of black-eyed beans
  • 1 Egg
  • 1/2 Onion minced
  • 1 Carrot chopped
  • Rosemary, sage, parsley
  • 2 tablespoons of Bread crumbs
  • Salt to taste
  • 2 tablespoons of Extra virgin oil
