1. Peel the apple and dice it.

2. Put the flour, the yeast and a tsp of cinnamon in a bowl. 

3. In a second bowl mix the cane sugar, the honey, the apple smoothie and the eggs.

4. Then mix fast the content of the two bowls together, they do not need to be homogeneous and add the apple dices. Pour the dough into the muffin moulds. 

5. Prepare the topping by mixing a handful of almonds, previously roughly grounded, with two tbsp of cane sugar and the remaining cinnamon. Then sprinkle it over the muffins. 

6. Bake them at 180° for 15-20 minutes approx.


  • 1 apple
  • 250 gr (1 cup and 1 tablespoon) of all-purpose flour (type 00)
  • 2 teaspoons of yeast
  • 2 teaspoons of cinnamon
  • 150 gr (3/4 cup) of cane sugar
  • 50 ml (3 teaspoons) of acacia honey
  • 1 apple smoothie
  • 100 ml (6 teaspoons) of extra virgin olive oil
  • 2 eggs
  • Almonds (with the skin) and cane sugar for decoration
