Preparation

  1. Preheat the oven to 180°C (350°F). Line a 35x40cm baking tray with parchment paper.
  2. In a large bowl, beat the eggs and sugar together until well combined. Gently fold in the sifted flour and baking powder, and then add the vegetable oil.
  3. Spread the batter evenly onto the prepared baking tray and bake in a preheated, fan-assisted oven for approximately 10-12 minutes.
  4. Carefully transfer the baked sponge onto a large tray. Sprinkle a layer of buttercream frosting followed by a layer of fruit filling over the sponge.
  5. Roll the sponge into a log shape, taking care not to press too hard at the end.

For the buttercream frosting:

  1. In a mixing bowl, beat the butter until creamy.
  2. Gradually add the powdered sugar and continue to beat until well combined.
  3. Add the mascarpone and mix until smooth.

For the fruit filling:

  1. In a saucepan, combine the fruit smoothies and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens.
  2. Allow the fruit filling to cool before spreading it onto the sponge.

Once the Yule log is rolled and filled, you can decorate it as desired with additional frosting, powdered sugar, or festive decorations. Enjoy your Yule log!

  • Eggs 5
  • Flour 150 gr (1⅔ cup)
  • Sugar 150 gr (¾ cup)
  • Sunflower seed oil 15 ml (1 tablespoon)
  • Baking powder 1 teaspoon
  • For the buttercream frosting

For the buttercream frosting

  • Butter  150 gr (⅔ tasse)
  • Powdered sugar 150 gr (1⅓ tasse)
  • Mascarpone 100 gr (½ tasse)

For the fruit filling

  • Fruit smoothies 2
  • Cornstarch 2 tablespoons
