Spring salad in a jar

Preparation

  1. Boil the potatoes in salted water for about 10 minutes until tender. Drain them and cut them into cubes. 
  2. Boil the green beans until tender, then drain and cut them in half or into 3 pieces, depending on their length.
  3. Cut the feta cheese into small cubes and set it aside. 
  4. In a bowl, mix the boiled potatoes with Greek yogurt, LimonOlio and herbs to taste. 
  5. Using two 1 cup (500 ml) glass jars, layer the salad ingredients. Start with the seasoned potatoes, followed by the green beans, feta cheese, and the green peas.
  6. Seal the jars tightly and refrigerate overnight to let the flavors meld together.

Ingredients

  • 2 medium potatoes  
  • 2 tbsp (30 ml) 0% plain Greek yogurt 
  • 2 tbsp (30 gr) of feta cheese 
  • 1 tsp (5 gr) of fresh herbs 
  • ½ can (about 200 gr) of green peas drained
  • 3 tbsp (45 gr) of blanched green beans 
  • 1 tbsp (15 ml) of LimonOlio 
  • Salt and pepper
