Preparation
- Boil the potatoes in salted water for about 10 minutes until tender. Drain them and cut them into cubes.
- Boil the green beans until tender, then drain and cut them in half or into 3 pieces, depending on their length.
- Cut the feta cheese into small cubes and set it aside.
- In a bowl, mix the boiled potatoes with Greek yogurt, LimonOlio and herbs to taste.
- Using two 1 cup (500 ml) glass jars, layer the salad ingredients. Start with the seasoned potatoes, followed by the green beans, feta cheese, and the green peas.
- Seal the jars tightly and refrigerate overnight to let the flavors meld together.

- 2 medium potatoes
- 2 tbsp (30 ml) 0% plain Greek yogurt
- 2 tbsp (30 gr) of feta cheese
- 1 tsp (5 gr) of fresh herbs
- ½ can (about 200 gr) of green peas drained
- 3 tbsp (45 gr) of blanched green beans
- 1 tbsp (15 ml) of LimonOlio
- Salt and pepper
