We are thrilled to share some excellent news with you: we have recently upgraded our extruders by replacing their matrices.

The transition from teflon to bronze

Previously, our matrices were made of Teflon, but we have replaced them with bronze matrices. What does this mean exactly? Bronze-cut pasta involves extruding raw dough through a bronze die, bringing several notable advantages.

Reviving tradition

The tradition of bronze-cut pasta has existed for centuries and remains the best way to preserve the rich taste and texture of wheat. Before the advent of Teflon matrices, bronze was the standard. Even today, this method produces the most flavorful and textured pasta.

A better texture

Bronze-cut pasta has a unique texture. It is much less "slippery" than pasta made with Teflon, allowing it to blend more harmoniously with other ingredients and offering a better culinary experience.

Better sauce adherence

The rougher texture of bronze-cut pasta also allows sauce to adhere more effectively. This results in a more satisfying dish with better presentation. Due to their porosity, bronze-cut pasta absorbs sauces better, enriching the overall flavor of the dish. The sauce becomes an integral part of the dish rather than just a coating.

Enhanced flavors

Taste is another advantage of bronze-cut pasta. It integrates better with the other flavors of the dish, becoming the center of all the flavors. Teflon-cut pasta, which is often quickly dried, can be difficult to mix with sauces due to its less porous surface and smoother texture. In contrast, bronze-cut pasta allows you to experience dishes as they were meant to be, where all the ingredients marry perfectly.

No flash drying, richer color

Teflon-cut pasta is often rapidly dried for quick shipment to stores. Superior quality bronze-cut pasta, on the other hand, has the time to dry naturally, often taking 24 to 48 hours to fully dry. This gives it a paler color, as if it were artisanally made, unlike Teflon-cut pasta, which is uniformly yellow. Although this increases production costs, the result is a final product with far superior texture and flavor.
