Preparation

1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2. In a large bowl, beat the softened butter with the brown sugar until light and creamy.

3. Add the egg and vanilla extract and beat well.

4. Stir in the prune puree until the mixture is smooth.

5. In another bowl, combine the flour, baking soda, salt, and cinnamon (if using).

6. Gradually incorporate the dry ingredients into the wet mixture, stirring until the cookie dough is well blended.

7. Add the chocolate chips, mixing them evenly into the dough.

8. Using a tablespoon, drop portions of the dough onto the prepared baking sheet, spacing them slightly apart.

9. Bake in the preheated oven for about 10 to 12 minutes, or until the edges of the cookies are lightly golden.

10. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

  • 1 cup (150 g) of prune puree
  • ½ cup (115 g) of unsalted butter, softened
  • ½ cup (105 g) of organic brown sugar
  • 1 organic egg
  • 1 tsp of organic vanilla extract
  • 2 cups of organic all-purpose flour
  • 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • 1/2 tsp of cinnamon (optional)
  • 1/2 cup of dark chocolate chips (optional)
