BBQ chicken marinated in Bioitalia tomato sauce

Preparation

  1. In a bowl, mix the tomato sauce, olive oil, balsamic vinegar, honey, garlic, paprika, salt, and pepper. 
  2. Add the chicken and coat well with the marinade. 
  3. Cover and refrigerate for at least 2 hours (or overnight for more flavour). 
  4. Preheat the BBQ to medium heat. 
  5. Grill the chicken for about 10–12 minutes per side, until golden and cooked through. 
  6. Serve hot.

  • Serving idea. Serve with an orzo salad, grilled vegetables, a drizzle of Bioitalia olive oil, and a squeeze of fresh lemon. 
  • Save time. Make the marinade the night before — the longer it rests, the better the flavour. 
  • No BBQ? Bake in the oven at 400°F (200 °C) for 25–30 minutes or cook in a skillet over medium heat. 
  • Veggie twist. Try the marinade with tofu or grilled veggies like eggplant or cauliflower. 
  • Spicy version. Add chili flakes or a touch of harissa for extra heat. 

Ingredients

  • 2 cups (500 ml) chicken thighs or drumsticks, boneless if desired 
  • ½ cup (125 ml) Bioitalia tomato sauce 
  • 2 tbsp (30 ml) Bioitalia olive oil 
  • 1 tbsp (15 ml) Bioitalia balsamic vinegar 
  • 1 tbsp (15 ml) honey or maple syrup 
  • 1 garlic clove, minced 
  • 1 tsp smoked paprika 
  • Salt and pepper, to taste 
  • A few sprigs of fresh thyme or rosemary (optional)
