Blend the chickpeas and add the sugar, the honey, the half-melted butter and one yolk at a time, mix well. On a side, add the sifted starch to the baking powder, the cinnamon and the lemon zest. Mix all together. Then beat the egg whites and add them carefully to the mix. Pour it in the donut molds and put them in the pre-heated owen at 180°C for about 12 minutes. Once cooked, take it out from the oven, let it cool down, fill the donuts with a generous quantity of jam.

- Acacia or wildflower honey 70 gr (1/4 cup)
- Baking powder 1 tablespoon
- Hazelnut flour 50 gr (1/2 cup)
- Butter 60 gr (1/4 cup)
- Potato starch 60 gr (1/2 cup)
- Mixed berries extra jam 50 gr (3 tablespoons)
- Cinnamon to taste
- Salt 1 pinch
- Lemon zest
