Preparation

1. Preheat the oven to 180°C (350°F). 

2. Start assembling the lasagna. 

3. Pour a thin layer of basil tomato sauce onto the bottom of the baking dish. 

4. Place three lasagna noodles over the sauce. 

5. Evenly distribute half of the fried eggplants over the noodles. 

6. Sprinkle one-third of the cubed mozzarella over the eggplants. 

7. Sprinkle one-third of the grated Parmesan cheese over the mozzarella. 

8. Pour another thin layer of basil tomato sauce over the cheese. 

9. Repeat steps 3 to 7 to create a second layer. 

10. Add another layer of lasagna noodles over the second cheese layer. 

11. Pour the remaining basil tomato sauce over the lasagna noodles. 

12. Sprinkle the remaining mozzarella cheese over the sauce. 

13. Sprinkle the remaining grated Parmesan cheese over the mozzarella. 

14. Cover the baking dish with aluminum foil and bake for about 30-35 minutes, then uncover and bake for another 10-15 minutes until the cheese is golden and the lasagna is cooked through. Let the lasagna rest for a few minutes before serving. Slice and enjoy!

Ingredients

  • Baking dish 30x20cm
  • 9 Lasagna noodles (3 per layer)
  • 2 jars of Basil tomato sauce
  • 2 Large fried eggplants (or just grilled)
  • 1 cup (about 300 gr) of Cubed mozzarella
  • 1 cup (about 110 gr) of Grated Parmesan cheese
