Preparation

1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain the spaghetti and set aside.

2. Meanwhile, crack the eggs into a bowl and lightly beat them. Add the grated parmesan and mix. Incorporate the cooked spaghetti into the egg and cheese mixture.

3. Heat a skillet over medium heat and add the olive oil. Once the oil is hot, add the spaghetti mixture and spread it evenly in the skillet.

4. Allow the frittata to cook for a few minutes until the edges begin to loosen from the skillet.

5. Place a lid over the skillet and carefully flip the frittata onto the lid. Then, slide the frittata back into the skillet and let it cook on the other side for an additional 3 to 4 minutes or until golden brown.

6. Once cooked, remove the frittata from the skillet and cut it into portions. Serve warm or cold according to your preference.

  • Eggs 6
  • Parmigiano Reggiano 1/2 cup (45 gr)
  • Sunflower seed oil 1/4 cup (60 ml)
